Quick lunch for kids

Okay, MY kids never get tired of PB&J, but I have been trying to come up with a nice variety of lunches to be more balanced. My requirement is 10 min. or less prep time. Here is one that I thought was a stroke of genius:


PIZZA
1 toasted whole wheat english muffin
1 T. pre made spaghetti sauce
1 T. Whatever kind of cheese you have

put in microwave long enough to melt cheese and serve along with some fruit. Takes about 3-4 minutes total.

They love having their own little pizzas and it is healthy too. That's one point for mom!

Any other good lunch ideas?

I had these all the time as a kid. I also make them all the time for my kids. They are so great. We also put pepperoni on them.

another quick lunch is quesadillas. i just always have tortillas on hand, and then you grate or slice up some cheese. put the cheese on one half of the tortilla, fold it in half, and cook a few minutes on each side over medium heat until the cheese is melted.

it can be cut into kid friendly triangles, and served with ketchup, ranch dressing, or whatever they like. if you want to make it more substantial, you can add italian style diced canned tomatoes with the cheese, and it tastes very pizza like. you can also add leftover chicken, pork or steak...pretty much anything that sounds good to you!
